No bake mango cheesecake is often makes in summer season because this fruit mango comes in summer season and it is sweet in taste. If you love to eat mangoes so you will sure love this mango puree cake.
I made this mango cheesecake with white chocolate, cream cheese, heavy cream, lemon juice, lemon zest and vanilla extract for an extraordinary taste. The base of this cake made with biscuits and butter. And the toppings of this cake made with mango puree. If you wanna add other ingredients so you could do that.
This mango cheesecake is cool and perfect for summer season. It is practically sugar free and easy to make. It takes very less time and no special instrument is needed by this recipe. It is no bake cake. hence, just mix and refrigerate.
Ingredients :
Base
- 80oz (225g) biscuits
- 7 tbsp melted butter
fillings
- 6 mangoes🥭
- 14g gelatin powder
- 70 ml cold water
- 300g white chocolate
- 2 1/4 cup cream cheese
- 1 cup heavy cream
- 1 tbsp vanilla extract
- 2 tbsp lemon juice🍋
- 1 lemon zest🍋
Toppings
- 10g gelatin powder
- 150ml cold water
- 3 tbsp sugar
Method
Base
Take 80oz and(225g) biscuits grind them and add 7 tbsp. Melted butter mix it until combined.
Now pour In a spring form pan & press into bottom with the help of glass or bowl. Refrigerate it while making the filling.
fillings
To make mango puree take 6 mangoes, cut mangoes into cubes, pour into mixture and grind them until it becomes smooth then divide into 2 portions one in 300g and other is 200g in bowl.
In a bowl add 14g gelatin powder, add 70ml cold water. Let bloom for 10 mins.
In a small bowl add 300g white chocolate melt it in microwave for 3-4 mins.
In a medium bowl add 2 & 1/4 cup cream cheese whisk it until it becomes soft & smooth, add 1 cup heavy cream, 1 tbsp vanilla extract beat to soft peaks add 2 cup mango puree. Now add melted white chocolate, 2 tbsp lemon juice, zest of one lemon beat until combined and smooth.
Melt the gelatin in the microwave for 15 seconds. Gradually add few tbsp of cheesecake mixture in the gelatin mixture stir until combined. Pour the gelatin mixture into cheesecake mixture. Mix until combined. Now pour in the cake tin and refrigerate it while making the toppings.
Toppings
In a small bowl add 10g gelatin powder, 50ml cold water mix and let bloom for 10 mins.
In pan pour 300g mango puree add 100ml of water, 3 tbsp of sugar cook over medium heat stirring occasionally until the sugar is dissolve. Add bloomed gelatin stir until the gelatin is melted and incorporated. Let cool to room temperature.
Now pour this toppings in the cake tin, level it and refrigerate overnight. Then Demould your cake and decorate it as per your choice.
