Cheesecake is originated from newyork generally. It is great dessert, everyone likes it most and it is sweetened with sugar and can be flavoured with different ways. The layer of cheesecake is a mixture of sour cream, cheese cream, corn starch, vanilla extract and lemon juice and the base often consists crust. The base is made from crushed cookies and Graham crackers.
This cheesecake may be flavoured by Adding other toppings like pie with Fruit, whipped cream, chocolate sauce and other syrups. The mixture of this cake is commonly known by custard. I made it with egg.
I made the toppings with raspberrs and granulated sugar which made this cake really awesome. The custard and toppings layer gives this cake is unique and succulent sweet flavour. This yummy soft and fluffy cake recipe is one of my favorite. So check for a quick step by step method to prepare it.
Ingredients :
Base
- 120 gram biscuits
- 60 gram melted butter
Custard
- 400g cream cheese
- 120g granulated sugar
- 200g sour cream
- 150ml heavy cream
- 2 eggs
- 2 tbsp corn starch 🌽
- 1 &t 1/2 tbsp vanilla extract
- 1/4 lemon juice
Toppings
- 200g raspberrs
- 40g granulated sugar
- 1 tbsp water
Method :
First of all we will make a cake base so take a bowl add 120g biscuits crush them well & add 60g melted butter mix it gently then, pour in the cake tin and spread it evenly. Greased some butter on the remaining sides of cake tin and set parchment paper. Keep it aside.
Now, take a bowl add 400g cream cheese, 120g granulated sugar mix it until it becomes creamy now add 200g sour cream mix it. Add 150ml heavy cream, 2 eggs, 2 tbsp corn starch, 1 & 1/2 tbsp vanilla extract, 1/4 lemon juice mix it consistently. Now pour your custard mixture in the cake tin tap it gently and level it.
Bake(conventional) your custard mixture at 180°C for 30 mins. Reduce the oven to 150°C bake for 30 mins more. Turn off the oven, leave cheesecake in oven for 1 hour. Let it cool down. Refrigerate at least for 6 hours.
In a bowl add 200g raspberrs, 40g granulated sugar, 1 tbsp water mix and cove the bowl and microwave for 4-5 mins. After microwave filter this syrup in a bowl.
Demould your baked cake, pour toppings syrup and serve it with great smile😊.....!!!
Supper delicious!!! So light & fluffy, fresh and buttery and it is practically guilt free. This cake combines flavour of cheese and raspberry in a perfect & well-balanced way.
